Ingredients:

1 block Traditional Tempeh

¼ cup smoked beer (or regular beer if unavailable)

2 heaping tbsp BBQ sauce

2 tbsp olive oil

2 tsp soy sauce

1 tsp teriyaki

1 tsp liquid smoke

1 tsp smoked paprika

1 tsp smoked garlic powder

For coating: coarse steak/BBQ spice mix

For the Veggies:

2 small potatoes, cubed

1 sweet potato, cubed

1 carrot, cut into chunks

1 red onion, cut into wedges

2 tbsp olive oil

Salt & pepper to taste

To serve:

Ketchup (or your favorite dipping sauce)

1. Make the marinade
Mix all marinade ingredients in a bowl.

2. Prep the tempeh
Pierce the block of tempeh all over with a skewer. Inject or drizzle marinade into the holes so the flavors soak deep. Place in a container, pour the rest of the marinade on top, seal, and marinate for a few hours (or overnight).

3. Roast the veggies
Toss potatoes, sweet potato, carrot, and onion with olive oil, salt, and pepper. Roast at 200°C for about 30–35 minutes until golden and crisp.

4. Bake the tempeh
Transfer marinated tempeh to a baking sheet. Sprinkle the tempeh generously with coarse spice mix so the tempeh is completely covered. Bake at 180°C for about 45 minutes until the outside is caramelized and fragrant.

5. Serve
Slice the tempeh and serve warm or cold with the roasted veggies on the side and ketchup for dipping.
